Cuisine
Serbivindir is one of the most prominent examples of reflect of Sirnak animal husbandry culture on the cuisine. Although similar ones can be found across Turkey, it is indispensable for winter months in Sirnak mountain villages due to its healing and filling structure. It gets its unique taste from the ingredient called 'kurt', which is obtained by drying strained yogurt. After the wheat is thoroughly boiled, it is combined with crushed dried yogurt and drizzled with local butter.
Ingredients
- 2 cups of wheat berries
- 5-6 pieces of dried yogurt (kurt) or strained yogurt
- 3 tablespoons of butter
- 1 teaspoon of red pepper flakes
- Enough water and salt
Preparation
- Wash the wheat and boil it well in plenty of water until soft.
- Soak the dried yogurts in hot water and crush them to get a smooth buttermilk consistency.
- Add the prepared yogurt to the boiled wheat and cook over low heat, stirring constantly.
- When the dish thickens, take it to a serving plate and make a hollow in the center.
- Pour the butter and red pepper flakes melted in a pan into this hollow and over the dish.
