Baked like a cake inside a special dough cover, Perde Pilaf is the crown jewel of Baykan tables. Almonds, currants, and partridge or rooster meat inside add a rich aroma. Ingredients

  • 3 cups of rice
  • 500g boiled chicken or partridge meat
  • 1 tea glass of peeled almonds
  • 1 tablespoon currants
  • For the dough: 2 eggs, 3 spoons of yogurt, flour

Preparation

  1. Sauté the rice with almonds and currants in butter and cook halfway with chicken broth.
  2. Knead a soft dough with egg, yogurt, oil, and flour, then roll it out thinly.
  3. Decorate a fez-shaped pot with almonds, spread the dough inside, and fill with the rice.
  4. Close the hanging edges of the dough, bake until golden brown, and serve by turning upside down.
