In the culinary culture of Elbeyli, 'Shihil Mahshi' is prepared by scooping out lightly fried small zucchinis and stuffing them with a mixture of minced meat and chickpeas. Unlike other stuffed dishes, it contains rich meat and chickpeas instead of rice, and the zucchinis are fried beforehand. Served topped with garlic yogurt, this main dish is frequently requested in traditional restaurants marked on the Harita. It is one of the lightest stuffed dishes in Türkiye.
Ingredients
- 1 kg small zucchinis
- 300 g minced meat
- 1 cup boiled chickpeas
- 1 onion
- 1 tablespoon tomato paste
- Garlic yogurt (for serving)
Preparation
- Scrape the outside of the zucchinis, scoop out their insides, and fry them lightly in vegetable oil, then drain.
- In a separate pan, sauté the chopped onion with minced meat, then add the boiled chickpeas and spices.
- Stuff the fried zucchinis with the meat mixture and arrange them in a pot.
- Add tomato paste water and cook over low heat until the zucchinis are tender; serve topped with garlic yogurt.
