- Lamb or Kid Meat (Diced)
- Shallots and Garlic
- Green Peppers and Tomatoes
- Tail Fat or Butter
- Mountain Thyme and Chili Flakes
Preparation
- Saute the diced meat on a sac plate until it releases and reabsorbs its juices.
- Add butter or tail fat along with the shallots and stir-fry.
- Incorporate chopped peppers and garlic, and continue cooking.
- Finally, add tomatoes and plenty of mountain thyme, then let it simmer on low heat.
