About

A juicy meat dish flavored with plenty of thyme, made from the meat of livestock grazing in the highlands of Sariveliler.

Flavors, dishes and restaurants

Cuisine

The secret to the flavor of this dish lies in the meat of kids and lambs raised in the high-altitude pastures of Sariveliler. It is traditionally cooked on a iron sac plate by adding wild mountain thyme. While meat dishes are popular across Karaman, the natural quality of the meat here sets it apart. See the Map area for restaurant locations.

Ingredients

  • Lamb or Kid Meat (Diced)
  • Shallots and Garlic
  • Green Peppers and Tomatoes
  • Tail Fat or Butter
  • Mountain Thyme and Chili Flakes

Preparation

  1. Saute the diced meat on a sac plate until it releases and reabsorbs its juices.
  2. Add butter or tail fat along with the shallots and stir-fry.
  3. Incorporate chopped peppers and garlic, and continue cooking.
  4. Finally, add tomatoes and plenty of mountain thyme, then let it simmer on low heat.
