Cuisine

As one of the most authentic flavors of Sariveliler cuisine, Batirik holds an important place in the garden culture combined with the breeze of the Taurus Mountains. Although known throughout Karaman, in this district, roasted wild pistachio (terebinth) is added to provide a unique aroma. Ingredients

  • Fine Bulgur (Dugurcuk)
  • Roasted Terebinth or Walnuts
  • Tomato Paste and Onion
  • Fresh Parsley and Basil
  • Cold Water and Lemon Juice

Preparation

  1. Crush the roasted terebinth in a mortar until its oil comes out.
  2. Knead the fine bulgur with finely chopped onions, tomato paste, and crushed terebinth.
  3. Add fresh herbs and spices to the mixture and continue kneading.
  4. Dilute the mixture with cold water until it reaches a soup consistency and serve with ice.
