Traditional sherbet obtained from wild rosehip fruits growing in rural areas of Sancaktepe.

Cuisine

This drink, preferred in summer on Sancaktepe tables, is a local extension of İstanbul palace cuisine. See Harita for locations.

Ingredients

  • 500 g dried rosehip
  • 2 liters of water
  • 1 cup of granulated sugar
  • 1 cinnamon stick
  • 3-4 cloves

Preparation

  1. Wash the rosehip fruits thoroughly and crush them.
  2. Add water to a large pot and boil the fruits.
  3. Add sugar, cinnamon, and cloves to the boiling sherbet.
  4. Strain and serve cold.
