As one of the most exquisite members of Vienne cuisine, this goat cheese is known for its subtle nutty aroma. While found in gourmet delicatessens throughout France, it is best enjoyed fresh at Vienne's local markets. It is typically served on cheese boards after dinner or lightly warmed over salads.

  • Raw goat's milk
  • Rennet
  • Salt
  • Lactic cultures
  • Natural cheese mold

Preparation

  1. Fresh goat's milk is brought to the appropriate temperature for lactic fermentation.
  2. Rennet is added to form the curd, which is then ladled into molds.
  3. The drained cheese is removed from the molds and salted by hand.
  4. It is left to ripen in special cellars for at least 8 days.
