  • Beef stock (Demi-glace)
  • Butter

Preparation

  1. Finely chopped shallots are sautéed in a small amount of butter until translucent.
  2. Côte-Rôtie wine is added and reduced by half over medium heat.
  3. Rich beef stock (demi-glace) and thyme are added, then simmered until thickened.
  4. Cold butter cubes are whisked in just before removing from heat for a glossy finish.
