Cuisine

Baked in traditional stone ovens, kete is always made during holidays in Posof culture. Filled with flour roasted in butter, this pastry holds an important place in the culinary heritage of Türkiye. Check the Harita panel for locations.

Ingredients

  • 1 packet of yeast
  • 3 cups of milk
  • 200 grams of butter
  • Flour and salt as needed
  • For filling: 1 cup of flour and 3 tablespoons of butter

Preparation

  1. Knead a soft dough with milk, yeast, salt, and flour, then leave to ferment.
  2. For the filling, roast flour in butter until slightly golden, then let it cool.
  3. Divide the dough into balls, roll them out, place the roasted flour inside, and seal.
  4. Brush with egg yolk and bake in the oven until golden brown.
