Cuisine

As one of the most established pastries of Osmaniye cuisine, kombe is prepared throughout Merkez with special kombe spices and the famous local peanuts. Cooked in wood fires in local bakeries located on the Harita, this cookie is known for its long shelf life.

Ingredients

  • 1 cup melted butter
  • 1 cup olive oil
  • 1 cup milk
  • 1 cup granulated sugar
  • 1 packet of kombe spice mix (cinnamon, cloves, nutmeg, mahleb)
  • 1 cup crushed Osmaniye peanuts
  • Flour as needed

Preparation

  1. Mix milk and sugar until the sugar dissolves.
  2. Add melted butter, olive oil, and the kombe spice mix.
  3. Gradually add flour and knead into a soft dough.
  4. Take walnut-sized pieces of dough, fill them with crushed peanuts, and shape them using a special wooden mold.
  5. Bake in a preheated oven at 180°C until lightly golden.
