Ingredients

  • 500g Fatty pork meat (minced)
  • 150g Dried local spicy red pepper powder
  • 15g Salt
  • Natural casing
  • Beech wood chips for smoking

Preparation

  1. Mix the minced pork, spicy pepper powder, and salt in a large bowl until fully homogeneous.
  2. Stuff the mixture tightly into natural casings and tie the ends securely.
  3. Lightly smoke the sausages.
  4. Leave them to cure in a cool, well-ventilated environment for at least 3 to 6 months.
