Cuisine

Carefully harvested during the vintage season, the grapes are crushed in stone pools to extract their juice. Boiled for hours over wood fire, it is a staple breakfast food across Kilis and wider Türkiye.

Ingredients

  • 50 kg Musabeyli black grapes
  • 1 cup of special white clay (molasses clay)
  • Wood fire (for cooking)
  • Clean straining cloths
  • Large copper cauldron

Preparation

  1. Wash the collected grapes and crush them in special pools to obtain the juice.
  2. Add the special molasses clay to clarify and reduce acidity, then let it rest overnight.
  3. Strain the clarified juice through cloths and transfer it to large copper cauldrons.
  4. Boil over wood fire for hours, stirring constantly until it reaches a thick, syrupy consistency.
