These olives, the most famous geographically indicated product of the Mudanya district, are known for their thin skin and small pits.

Cuisine

Mudanya olives have a huge reputation in Bursa and throughout Türkiye as table olives. Matured with the sea breeze, these olives are cured naturally.

Harvested olives are left to ferment in traditional wells or barrels using only rock salt and water. Gathered from olive groves along the coast shown on the Map, this unique flavor is essential for breakfast.

Ingredients

  • 5 kg Mudanya black olives
  • 500 g coarse rock salt
  • 1 Turkish tea glass of olive oil
  • 1 tablespoon of vinegar
  • Half a tea glass of water

Preparation

  1. Wash and drain the freshly harvested olives.
  2. Fill the olives and rock salt into a large container in alternating layers.
  3. Add the olive oil, vinegar, and water, then close the lid tightly.
  4. Shake the container every day to release the bitter juice and distribute the salt. The olives will be ready to eat in about 2-3 months.
