Cuisine

Particularly grown in the villages of Mudanya, the mastic artichoke holds an important place in Bursa cuisine. It is distinguished throughout Türkiye by its aroma.

Local people cook this vegetable with the district's own extra virgin olive oil. Harvested from agricultural areas visible on the Map, artichokes are stuffed with peas and carrots.

Ingredients

  • 5 cleaned Mudanya artichokes
  • 1 onion
  • 1 Turkish tea glass of peas
  • 1 carrot
  • 1 tea glass of Mudanya olive oil
  • Juice of half a lemon

Preparation

  1. Dice the carrots and lightly boil them together with the peas.
  2. Pour olive oil into a wide pot and sauté the chopped onions.
  3. Place the cleaned artichoke bottoms into the pot, and distribute the boiled vegetables over them.
  4. Add lemon juice, salt, and hot water, then cook over low heat until the artichokes are tender.
