A historical rice dish made with special rice grown in the ancient Konuralp region within the borders of Duzce. It is also known as palace cuisine rice across Türkiye.

Cuisine

Konuralp Rice is the product of the Konuralp basin, where rice farming has been carried out since the Roman period. It is one of the oldest elements of Duzce culture. Cooked with broth and plenty of butter, the grains of this rice have a unique brightness. Local restaurants in the Konuralp region can be found via the Harita.

Cooked in giant cauldrons at weddings and special occasions, this flavor is the center of Duzce rice culture.

Ingredients

  • 2 cups Konuralp rice
  • 3 cups hot meat broth
  • 3 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Preparation

  1. Soak the rice in warm salted water for 20 minutes, then wash and drain.
  2. Melt the butter in a large pot, add the rice and sauté.
  3. When the rice becomes translucent, add hot meat broth and salt.
  4. Close the lid and cook on low heat until the water is absorbed, then let it rest with black pepper.
