Cuisine

As the masterpiece of Keskin cuisine, Keskin Tava is made by combining lamb chops or diced lamb with tomatoes, peppers, and garlic. This dish, one of the most important elements of Kırıkkale gastronomy, reaches a unique tenderness by cooking slowly in its own fat and juice.

Ingredients

  • 1 kg lamb chops or cubed lamb
  • 4 green peppers
  • 3 tomatoes
  • 1 head of garlic
  • 50 g tail fat
  • 1 teaspoon of salt

Preparation

  1. Arrange the meat nicely in a baking tray or clay dish.
  2. Add the chopped green peppers, tomatoes, and peeled garlic on top.
  3. Distribute the tail fat in small pieces over the ingredients and sprinkle with salt.
  4. Cook in a preheated stone oven or high-heat home oven for about 1.5 - 2 hours until the meat is tender and browned.
