This traditional dish is prepared by pounding wheat and meat together in large cauldrons until smooth. A vital part of Sakarya's heritage, Keskek achieves its unique aroma from the fried darti sauce poured on top. You can taste it during local festivals or at traditional restaurants listed on the Map.
Ingredients
- 500 grams of whole wheat berries
- 500 grams of bone-in chicken or beef
- 1/2 cup of darti (cooked milk fat sauce)
- 2 tablespoons of butter
- Salt and red pepper powder
Preparation
- Soak the wheat overnight, then cook it with meat in a large pot with plenty of water until very soft.
- Remove the bones from the meat and pound the wheat and meat together with a wooden spoon until it reaches a stretchy texture.
- In a separate pan, melt the butter, add the darti, and fry until slightly browned.
- Plate the warm Keskek and pour the hot darti and pepper sauce over it before serving.
