Cuisine

The white chestnut pumpkin, an agricultural symbol of Sakarya, turns into a unique dessert by local masters. You can find this traditional oven-baked delicacy at local spots indicated on the Map. Its fibrous texture and intense flavor stand out remarkably.

Ingredients

  • 1 kg Adapazari chestnut pumpkin
  • 2.5 cups of granulated sugar
  • 1/2 cup of tahini
  • 1 cup of crushed walnuts
  • Clotted cream (optional)

Preparation

  1. Slice and peel the pumpkins, place them in a large pot, and pour sugar over them.
  2. Let them sit in sugar for at least 5-6 hours, preferably overnight, until they release their juices.
  3. Cook over low heat until tender, then transfer to a baking tray to brown slightly in the oven.
  4. Once cooled, drizzle generously with tahini and sprinkle with crushed walnuts before serving.
