Ingredients

  • 500g Mogette de Vendée beans
  • 2 thick slices of Vendée ham
  • 50g butter
  • 2 cloves of garlic
  • 1 bouquet garni (rosemary, thyme)

Preparation

  1. Soak the Mogette beans in water overnight.
  2. Simmer the beans with garlic and the bouquet garni over low heat until tender.
  3. Drain the beans and stir in a generous amount of local butter.
  4. Pan-sear the thick ham slices on both sides and serve immediately over the warm beans.
