Prepared with rich aromatic ingredients like mahleb, fennel, and sesame seeds, the dough is baked slowly over a wood fire in stone ovens. Ingredients
- 1 kg of flour
- 1 pack of fresh yeast
- 2 tablespoons of mahleb
- 1 tablespoon of anise or fennel
- 1 cup of melted butter
- Sesame and nigella seeds (for top)
Preparation
- Dissolve yeast in warm water; add flour, mahleb, fennel, melted butter, and salt to knead a firm dough.
- Leave the dough to ferment in a warm environment for about 1 hour.
- Shape large balls from the fermented dough into round, thick disks.
- Make holes on it with a fork, brush with water or egg yolk, and sprinkle with sesame and nigella seeds.
- Bake in a preheated stone oven or high-heat home ovens until well browned on top.
