Kutulk (stuffed meatballs), which has a very important place in traditional Batman cuisine, is carefully prepared in the Merkez district, especially when hosting guests and during holidays. The difference from other regions is the consistency of its dough and the balance of regional spices with plenty of basil used in its filling. Cooked by boiling method, this exquisite delicacy is served by pouring melted hot butter over it. Ingredients

  • 2 cups of fine bulgur for meatballs
  • 1 cup of cracked wheat (yarma)
  • 300 grams of low-fat minced meat (for filling)
  • 3 onions
  • 1 tablespoon of dried basil
  • Salt, black pepper, chili flakes, butter

Preparation

  1. For the filling, sauté chopped onions with minced meat, add spices and basil, then let it cool down.
  2. For the outer dough, soak bulgur and cracked wheat with warm water and salt, then knead until well combined.
  3. Take walnut-sized pieces from the dough and open them thinly inside using your finger.
  4. Fill with the prepared cold meat mixture and close by shaping into a ball or a lemon shape.
  5. Boil in boiling salted water until the meatballs rise to the top, transfer to a serving plate, and drizzle with melted hot butter.
