As one of the most popular pastries of Batman culinary culture, Sham pastry is cooked using traditional methods especially in homes and local restaurants in the Merkez region. A mixture of highly seasoned minced meat, onions, and parsley is added into the thinly rolled unleavened dough. The pastries, closed in a half-moon shape, are cooked on an oil-free sac until both sides are browned, and then served hot with melted butter on top. Ingredients
- 500 grams of flour
- 300 grams of minced meat
- 2 medium onions
- 1 bunch of parsley
- Salt, black pepper, chili flakes
- Half a glass of water (for dough)
Preparation
- Knead an unleavened dough with flour, water, and salt until smooth, then let it rest.
- For the filling, finely chop the onions and mix thoroughly with minced meat, finely chopped parsley, and spices.
- Take small pieces from the rested dough and roll them out into thin circles using a rolling pin.
- Spread the prepared minced meat filling over half of the dough, fold the other half over it, and press the edges firmly.
- Cook on a hot oil-free sac or a non-stick pan, turning both sides, and spread butter on top while hot.
