These meatballs, which are the best companion of the evening after-work rush in Güngören, are served in half a loaf of bread accompanied by plenty of onions and parsley. Known as 'tükürük köftesi' in different parts of Turkey, this flavor has taken on a different character with the special spice blends of Haznedar artisans.

You can notice that they are sold with roasted peppers and tomatoes on mobile stalls set up on the streets of Güngören during match days or crowded events in Istanbul while drawing your route on the Map.

Ingredients

  • Medium-fat ground beef
  • Onion (grated)
  • Cumin, black pepper, salt
  • Breadcrumbs or stale bread
  • A little water (to knead the mixture)
  • Onion salad with sumac and parsley (for serving)

Preparation

  1. Place the ground meat, grated onion, spices, and crumbled bread in a large bowl.
  2. Knead the meatball mixture for a long time, adding water little by little, until it reaches a gummy consistency.
  3. Break off walnut-sized pieces from the mixture and prepare flat meatballs.
  4. Fry both sides of the meatballs on a grill or in a lightly oiled pan.
  5. Serve by adding the cooked meatballs, sumac onion, and tomatoes between a half-loaf of bread.
