Hunkiri is made by skimming and slightly salting the special layer that forms on top of boiled milk. - Fresh full-fat cow's milk
- Rock salt (very small amount)
- Village starter culture layer
- Natural buttermilk whey
- Pure spring water
Preparation
- Freshly milked high-fat milk is boiled in deep cauldrons for a long time.
- The special cream layer forming on the boiling milk is carefully skimmed off.
- This skimmed layer is lightly salted and rested in a cool container.
- Once thickened, hunkiri is ready to be served alongside Göle kete.
