Cuisine

In Göle district, which has an economy completely based on livestock, every drop of milk is utilized. Hunkiri is made by skimming and slightly salting the special layer that forms on top of boiled milk. You can find out where to purchase this rare piece of Ardahan breakfast culture from the gourmet shops marked on the Harita.

Ingredients

  • Fresh full-fat cow's milk
  • Rock salt (very small amount)
  • Village starter culture layer
  • Natural buttermilk whey
  • Pure spring water

Preparation

  1. Freshly milked high-fat milk is boiled in deep cauldrons for a long time.
  2. The special cream layer forming on the boiling milk is carefully skimmed off.
  3. This skimmed layer is lightly salted and rested in a cool container.
  4. Once thickened, hunkiri is ready to be served alongside Göle kete.
