Cuisine

Endemic Mazrone grapes harvested in autumn in Gercus are used. This molasses, essential to Batman culinary culture, is prepared traditionally and consumed widely across the district.

Ingredients

  • Mazrone grapes
  • Molasses clay (white soil)
  • Water
  • Wood fire
  • Traditional cloth strainer

Preparation

  1. Grapes are washed and crushed in stone pools to extract the juice.
  2. Molasses clay is added to the grape juice for clarification.
  3. The mixture is boiled in large cauldrons over a traditional wood fire.
  4. Once thickened, the molasses is strained, cooled, and jarred.
