Flavors, dishes and restaurants

Cuisine

Located in the north of İstanbul, the Arnavutköy district has a rich culinary culture featuring freshwater fish provided by Lake Terkos. Catfish stew, slowly cooked in earthen casseroles with butter, garlic, tomatoes, and peppers in restaurants within the Durusu area, is especially preferred during winter months. Fresh ingredients can be sourced from local markets; you can check the Harita section to see the location.

Blended with the natural juices of the fish and the aroma of fresh vegetables, this special dish differs from other fish recipes across Türkiye with its unique freshwater fish texture.

Ingredients

  • 1 kg cleaned Terkos catfish (cubed)
  • 2 large tomatoes
  • 3 green peppers
  • 4 cloves of garlic
  • 2 tablespoons of butter
  • 1 teaspoon of salt and black pepper

Preparation

  1. Cut the cleaned catfish into cubes and season lightly with salt.
  2. Spread butter on the bottom of the earthenware pot, place sliced garlic and peppers.
  3. Arrange the fish pieces on top of the vegetables.
  4. Add peeled and chopped tomatoes on top, sprinkle black pepper and close the lid.
  5. Bake in a preheated oven at 180°C for about 35-40 minutes until the fish is tender.
