Cuisine

This molasses, one of the top winter preparations by the local people, is consumed as a source of energy in the cuisine of Kırıkkale. It thickens by boiling grape juice over a wood fire for a long time. You can check the Harita panel to see the rural areas where it is made.

Ingredients

  • Local Delice grape juice
  • Molasses earth (white clay)
  • Wood fire
  • Large copper cauldrons
  • Straining cloths

Preparation

  1. The collected grapes are crushed to extract their juice.
  2. Special molasses earth is added to the juice to let it settle and rest.
  3. The clarified liquid is strained and transferred to copper cauldrons.
  4. It is boiled over a wood fire for hours until it reaches a thick consistency.
