Ingredients

  • 2 cups of coarse bulgur
  • 1 cup of dried yogurt (keshk) or thick strained yogurt
  • 3 tablespoons of local butter
  • 1 teaspoon of red pepper flakes
  • 4 cups of water
  • Salt to taste

Preparation

  1. Wash the bulgur and cook it in boiling salted water until it absorbs all the liquid.
  2. Mash the dried yogurt (keshk) with warm water until it reaches a smooth, thick consistency.
  3. Transfer the cooked bulgur to a large serving platter and create a well in the center.
  4. Pour the warm yogurt sauce into the well, drizzle with sizzling melted butter and red pepper flakes, then serve.
