Natural butter obtained from the milk of animals fed in the pastures of the Çıldır region is the flavor secret of this katmer. This katmer, which is also loved throughout Ardahan, is made by layering thin sheets of dough, greasing them, and frying them until golden brown on a griddle or oven.

Ingredients

  • 5 cups flour
  • 2 cups warm milk
  • 1 pack of yeast
  • 200 grams melted butter
  • 1 teaspoon salt

Preparation

  1. Mix flour, milk, yeast, and salt in a deep bowl to get a soft dough.
  2. Leave the dough to ferment for 40 minutes.
  3. Take pieces from the fermented dough, roll out thin sheets, and spread melted butter between them.
  4. Fold the greased sheets into a roll, and fry both sides on a griddle.
