Cuisine

Hasil, frequently made in Çıldır homes especially during cold winter days, is made by cooking fine bulgur until it reaches a porridge consistency. The center of this ancient dish of Ardahan cuisine is opened like a pool, filled with plenty of melted village butter, and eaten by pouring garlic yogurt around it.

Ingredients

  • 2 cups fine bulgur or cracked wheat
  • 4 cups water
  • 1 teaspoon salt
  • 3 tablespoons butter
  • 1 bowl of garlic yogurt

Preparation

  1. Cook the bulgur in salted water by stirring until it reaches a porridge consistency.
  2. Place the cooked hasil into a wide and deep serving dish.
  3. Open the center of the food like a pool using a spoon.
  4. Pour the heated butter into the opened space, and drizzle garlic yogurt around the edges.
