Cuisine

The freshwater carp, which grows in the cold waters of Çıldır Lake, is caught through traditional ice fishing in winter. This fish, which is one of the most authentic parts of Ardahan cuisine, is known for its high fat content and delicious meat. It is usually coated in cornmeal and fried over a wood fire or in a pan.

Ingredients

  • 1 large Çıldır carp fish
  • 1 cup cornmeal
  • 1 teaspoon salt
  • 1/2 cup vegetable oil (for frying)
  • 1 lemon

Preparation

  1. Scale the fish, clean the inside thoroughly, and wash it well.
  2. Slice the cleaned carp into rounds and season with salt.
  3. Place cornmeal on a wide plate and coat both sides of the fish slices.
  4. Fry both sides of the fish in hot vegetable oil in a pan until golden brown.
