Cuisine

Tarhana, dried in Celebi homes during summer, is consumed for health during winter. Chickpeas and strained yogurt give the soup its body. For places to try this, refer to the Harita section. It differs from other variants across Türkiye.

Ingredients

  • 3 tablespoons of homemade dry tarhana
  • 1 tablespoon of butter
  • 1 tablespoon of tomato paste
  • 1 tea glass of boiled chickpeas
  • 2 cloves of garlic

Preparation

  1. Soak the dry tarhana in a bowl of warm water to soften.
  2. Melt butter in a pot and sauté the tomato paste and crushed garlic.
  3. Add the softened tarhana and boiled chickpeas into the pot.
  4. Add cold water and cook, stirring continuously until it boils.
