Brovada is an integral part of the traditional winter cuisine in Udine. Turnips are fermented in grape pomace left over from red wine production. This traditional method holds a protected DOP status in Italia.

Ingredients

  • DOP Brovada turnips
  • Bay leaves
  • Garlic
  • Pork lard or olive oil
  • Meat broth

Preparation

  1. Grate the fermented turnips into thin strips.
  2. In a pot, sauté garlic and bay leaves in oil until fragrant.
  3. Add the grated turnips and cook slowly for hours, adding broth occasionally.
  4. Serve hot, typically alongside local muset sausages.
