Cuisine

Carrying the breezes of Black Sea cuisine, this soup is made with fresh kales bought from Duzce market. You can find it especially in winter in Merkez artisan restaurants. For transportation via map, you can check the Map section.

It is very nutritious with the kidney beans and cracked corn added to it. It is one of the most original winter dishes in northern Türkiye.

Ingredients

  • 1 bunch of black kale
  • 1 cup of boiled kidney beans
  • 2 tablespoons of corn flour
  • 1 onion
  • 1 tablespoon of butter

Preparation

  1. Chop the kale finely, boil to remove bitterness, and drain.
  2. Sauté the onion in butter until pink.
  3. Add kale, kidney beans, and hot water to the pot and leave to cook.
  4. While the soup is boiling, mix corn flour with a little water and pour it gradually to thicken.
