Cuisine

An indispensable part of traditional Vosges cuisine, Salade Vosgienne is prepared with a combination of lettuce, crispy bacon (lardons), croutons, and a warm cream dressing. Widely recognized throughout France, this hearty salad is served as a main course in local bistros. The freshness of the greens and the warmth of the dressing are the key secrets to this dish.

Ingredients

  • Dandelion greens or curly lettuce
  • 200g smoked bacon (lardons)
  • 2 slices of stale bread (cubed)
  • 2 tablespoons crème fraîche
  • 1 tablespoon vinegar
  • Salt and black pepper

Preparation

  1. Wash and dry the lettuce, then place it on a serving platter.
  2. Fry the bacon pieces in a pan until crispy, then scatter them over the lettuce.
  3. In the same pan, fry the bread cubes in the remaining fat until golden brown, then add to the salad.
  4. Deglaze the pan with vinegar, add the crème fraîche, and stir quickly to create a warm dressing.
  5. Pour the warm dressing over the salad and serve immediately.
