Cuisine
An indispensable part of traditional Vosges cuisine, Salade Vosgienne is prepared with a combination of lettuce, crispy bacon (lardons), croutons, and a warm cream dressing. Widely recognized throughout France, this hearty salad is served as a main course in local bistros. The freshness of the greens and the warmth of the dressing are the key secrets to this dish.
Ingredients
- Dandelion greens or curly lettuce
- 200g smoked bacon (lardons)
- 2 slices of stale bread (cubed)
- 2 tablespoons crème fraîche
- 1 tablespoon vinegar
- Salt and black pepper
Preparation
- Wash and dry the lettuce, then place it on a serving platter.
- Fry the bacon pieces in a pan until crispy, then scatter them over the lettuce.
- In the same pan, fry the bread cubes in the remaining fat until golden brown, then add to the salad.
- Deglaze the pan with vinegar, add the crème fraîche, and stir quickly to create a warm dressing.
- Pour the warm dressing over the salad and serve immediately.
