Wild mountain blueberries, locally called 'brimbelles', are the golden fruit of Vosges gastronomy. Harvested during the summer months, these berries are baked on a crisp pastry crust. Unlike common tarts found across France, this version uses minimal sugar to preserve the authentic tartness of the wild berries.
Ingredients
- 250g flour (for the pastry)
- 125g butter
- 500g fresh Vosges wild blueberries
- 3 tablespoons granulated sugar
- 1 tablespoon cornstarch
- 1 egg
Preparation
- Mix flour, butter, and egg to form a smooth pastry dough, then rest it in the fridge.
- Roll out the dough, fit it into a tart pan, and prick the base with a fork.
- Toss the wild blueberries gently with cornstarch and sugar, then spread evenly over the dough.
- Bake in a preheated oven at 180°C for 35-40 minutes until the crust is golden.
- Let it cool to room temperature before slicing and serving.
