Umu is a thousand-year-old cooking technique in the islands of Wallis and Futuna. Ingredients such as pork, fish, bananas, and taro are wrapped in banana leaves and placed on hot volcanic stones. This method is indispensable for festive meals in this territory of France.

Ingredients

  • 2 kg pork meat or large fish chunks
  • 4 taro roots
  • 6 green bananas
  • 1 liter fresh coconut milk
  • Large fresh banana leaves

Preparation

  1. Dig a deep pit in the ground, place volcanic stones inside, and light a large fire to heat the stones until red hot.
  2. Wrap the pork meat, peeled taro roots, and bananas tightly in cleaned banana leaves.
  3. Place the wrapped food over the hot stones, drizzle with coconut milk, and cover again with more leaves.
  4. Seal the oven completely with soil and let it slow-cook for approximately 3 to 4 hours.
