Ingredients

  • 4 Whole squids (totani)
  • 80g Breadcrumbs
  • 1 tbsp Capers
  • 1 tbsp Pine nuts
  • 400g Tomato puree
  • Garlic, extra virgin olive oil, and white wine

Preparation

  1. Clean the squids, separate the tentacles, and chop them finely.
  2. Sauté the chopped tentacles with garlic, capers, pine nuts, and breadcrumbs in olive oil to prepare the filling.
  3. Stuff the mixture into the squid bodies and seal the openings with toothpicks.
  4. Sear the squids in a pan, deglaze with white wine, then add tomato puree and simmer on low heat for 25 minutes.
