Ingredients

  • 1 kg Fatty Pork (or pork and beef mixture)
  • 15 g Salt
  • 2 g Cumin (ground)
  • 3 g Marjoram (dried)
  • 1 clove Garlic (minced)
  • Natural Sheep Casings

Preparation

  1. Grind the meat together with the spices and garlic twice through the fine plate of a meat grinder.
  2. Mix the sausage meat well, let it rest in a cold environment, and stuff it into the sheep casings.
  3. Link the sausages into portions and grill them over oak charcoal fire until beautifully browned on both sides.
  4. Sprinkle slightly with beer or water before putting them on the grill to prevent the casings from bursting.
