Cuisine

An indispensable part of local barbecue culture, Rostbrätel is one of the most popular meat dishes in Thuringia. Pork neck steaks are marinated for at least 24 hours in a special mix of local beer, mustard, and sliced onions.

During grilling over charcoal, the meat is basted with beer to enhance its smokiness and flavor. To discover where to eat the best steaks in Thuringia, look at the local guide on our Map and enjoy this authentic staple of Deutschland.

Ingredients

  • 4 Pork Neck Steaks (thick cut)
  • 500 ml Thuringian Dark Beer (or pilsner)
  • 3 Large Onions (sliced into rings)
  • 4 tablespoons Thuringian Mustard
  • Salt and Black Pepper

Preparation

  1. Season the steaks with salt and pepper, then rub both sides generously with mustard.
  2. Layer the steaks and onion rings in a large container, then pour the dark beer over until fully covered.
  3. Cover and let it marinate in the refrigerator for at least 12 to 24 hours.
  4. Grill the steaks and onions over charcoal, occasionally basting the meat with the remaining marinade beer to keep it juicy.
