Cuisine

One of the pinnacles of traditional culinary culture, Sura Doldurmasi is made from kid or lamb ribs in the Mugla region. The rib meat, stuffed with seasoned rice, is cooked slowly for hours in large copper pots or stone ovens. Ingredients

  • 1 whole lamb or kid rib
  • 2 cups rice
  • 1 tablespoon pine nuts
  • 1 tablespoon currants
  • 1 teaspoon allspice and black pepper
  • 3 tablespoons butter

Preparation

  1. Prepare a semi-cooked seasoned rice in butter with pine nuts, currants, and spices.
  2. Cut the side of the rib meat with a knife to create a pocket shape.
  3. Stuff the prepared rice inside the rib and sew the opening tightly with a needle and thread.
  4. Rub with tomato paste and oiled water, then bake slowly in a large tray until the meat falls off the bone.
