Originating from the Bodrum region within the borders of Mugla, Cokertme Kebab is indispensable for both locals and tourists. It is prepared by frying potatoes cut into thin matchsticks, adding strained yogurt and beef tenderloin slices with a special sauce on top. Ingredients
- 300 g beef tenderloin (julienned)
- 4 medium potatoes
- 1 bowl strained yogurt
- 2 cloves garlic
- 2 tablespoons butter
- 1 tablespoon tomato paste
Preparation
- Cut the potatoes into matchstick thinness, wash, dry, and fry in hot oil until crispy.
- Saute the julienned meat in olive oil over high heat until it releases and absorbs its water.
- Crush the garlic and mix with strained yogurt; fry tomato paste in butter to prepare the sauce.
- Layer the fried potatoes, garlic yogurt, and sauteed meat on a serving plate, then drizzle the tomato sauce on top.
