Cuisine

As one of the most famous pastry desserts of Şanlıurfa, Şıllık is traditionally consumed during winter. Unique to this region in Türkiye, it is enriched with hot local clarified butter poured just before serving.

Ingredients

  • 2 cups of flour
  • 2 cups of milk
  • 200 g crushed walnuts
  • 2 cups of granulated sugar (for syrup)
  • 2 tablespoons of Şanlıurfa clarified butter

Preparation

  1. Whisk flour and milk to obtain a fluid crepe batter.
  2. Cook thin crepes in a non-stick pan on both sides.
  3. Layer the crepes on top of each other, generously sprinkling crushed walnuts between them.
  4. Pour hot sugar syrup and melted clarified butter over it, then slice and serve.
