Fried fish is marinated in a sauce of white vinegar, plenty of onions, pine nuts, and raisins, then rested for at least a day. Ingredients

  • 1 kg fresh sardines or large anchovies (Sardoni)
  • 500g white onions
  • 1 cup white wine vinegar
  • 30g pine nuts and 30g raisins
  • Flour and peanut oil for frying

Preparation

  1. Clean the fish, remove the bones, flatten them, coat in flour, and fry in hot oil.
  2. In a separate pan, slowly sauté sliced onions in olive oil until very soft.
  3. Add the vinegar, raisins, and pine nuts to the onions and simmer for a few minutes.
  4. Layer the hot fried fish and the onion sauce alternately in a dish, then let it rest in the fridge for 24 hours before serving.
