It is a dessert that São Miguel families gather around grandmothers to make, especially on local holidays and festivals. A natural sweetness is provided to the dough by using very ripe bananas obtained from Cabo Verde's local agriculture.
You must definitely try this delicacy, often sold alongside coffee in marketplaces and small shops around the Map, served hot and sprinkled with fresh cinnamon.
Ingredients
- 3 very ripe bananas
- 1 cup wheat flour
- 1/4 cup sugar
- 1 teaspoon baking powder
- Oil for frying
- Cinnamon and sugar mixture for dusting
Preparation
- Mash the ripe bananas in a deep bowl with a fork until completely pureed.
- Add sugar, flour, and baking powder, and mix until a thick batter is formed.
- Heat oil in a frying pan. Take a tablespoon of the batter and drop it into the hot oil.
- Fry both sides of the dough until golden brown.
- Place the fried Fidjós on paper towels to drain excess oil. Sprinkle with cinnamon and sugar while still hot and serve.
