Fresh seafood caught in the ocean nets of São Miguel fishermen forms the basis of the local Bafa. In accordance with Cabo Verde culinary traditions, it is served marinated with a low-fat sauce, primarily olive oil and vinegar.

Ingredients
- 500g cleaned octopus or squid
- 1 red onion, thinly sliced
- 1/4 cup olive oil
- 2 tablespoons white vinegar or lemon juice
- Salt, pepper, fresh cilantro
Preparation
- Boil the seafood in salted water until tender. For octopus, this can take 40-50 minutes.
- Let the boiled seafood cool down and then chop it into bite-sized pieces.
- In a large bowl, mix the sliced red onion, olive oil, and vinegar.
- Add the seafood to this dressing and toss thoroughly.
- Sprinkle with fresh cilantro and let it rest in the refrigerator for at least 1 hour before serving.
