Prepared with fresh tuna bought from the Calheta fish market, these pastries are the crown jewel of São Miguel afternoon teas and gatherings. They are skillfully freshly fried and sold at small kiosks lined up along the coast near the Map location.
The filling, marinated with hot peppers and island-specific local spices, makes this snack highly special within Cabo Verde cuisine. The dough is rolled out very thinly and sealed in a crescent shape.
Ingredients
- 300g flour
- 1 can or freshly cooked tuna
- 1 onion, finely chopped
- 1 teaspoon of hot pepper sauce (malagueta)
- Salt, black pepper, and fresh parsley
- Oil for frying
Preparation
- Knead a smooth dough with flour, a little water, and a pinch of salt. Let it rest.
- Sauté the onions in a pan, add the tuna, parsley, and hot sauce, and cook briefly.
- Take small pieces of the dough and roll them out into thin circles.
- Place the tuna mixture inside, fold them into a half-moon shape, and press the edges with a fork.
- Fry in hot oil until both sides are golden brown and serve hot.
