Ingredients

  • 500g Bread flour
  • 4 Eggs
  • 150g Grated Pecorino cheese
  • 100g Diced Parmigiano
  • 25g Fresh yeast
  • 100ml Milk and melted butter

Preparation

  1. Dissolve the yeast in warm milk and mix with a bit of flour to create a starter dough.
  2. Add the remaining flour, eggs, butter, and all the cheese, kneading until smooth.
  3. Place the dough in a specific high-sided mold and let it rise until doubled in size.
  4. Bake at 180°C for about 45 minutes until the top turns a deep golden brown.
