Considered the heart of Terni gastronomy, Ciriole is an eggless pasta made purely from flour and water. Frequently found in the traditional restaurants and local markets of the city, this dish has been prepared using the same recipe for centuries. Ingredients

  • 400g Durum wheat flour
  • About 200ml Water
  • 400g Peeled tomatoes
  • 2 Cloves of garlic
  • 1 Hot chili pepper
  • Extra virgin olive oil and salt

Preparation

  1. Sift the flour onto a work surface, make a well in the center, and slowly add water to knead a firm dough.
  2. After resting the dough, roll it out thickly and cut it into thick, elongated strands.
  3. In a pan, sauté olive oil, crushed garlic, and chili, then add the tomatoes and simmer the sauce.
  4. Boil the pasta in plenty of salted water, toss with the sauce, and serve hot.
