Ingredients

  • 1 large green (unripe) papaya
  • 500g granulated sugar
  • 1 cinnamon stick
  • 3-4 cloves
  • Sliced hard Fogo goat cheese for serving

Preparation

  1. Peel the green papaya, remove the seeds, and grate or cut into thin strips.
  2. Wash the chopped papaya in water to remove bitterness and drain.
  3. In a pot, prepare a syrup with sugar, a small amount of water, cinnamon, and cloves, then add the papaya.
  4. Simmer on low heat for about 1 hour until the papaya becomes translucent and thick. Serve chilled with slices of goat cheese.
